Ingredients: (Serves 4-6) 2-3 Kidneys 200 gram Minced Pork 100 gram Pork Liver sliced 8 cloves Garlic pounded 4 cm piece shredded Ginger 3 stalks Spring Onion cut in 3 cm length 2 stalks Chinese Celery cut in 3 com length 3 tbsp Soy Bean Paste pounded 800 ml Water 3 tbsp Oil Salt to taste 2 tbsp Brandy Method: 1. Preparing kidneys. Wash the kidneys with running water and cut into half lengthwise. Remove the central membrane, slit the surface and cut each half into quarter. Soak in water for 20 minutes. Drain and pour boiling water over the kidneys pieces and soak for 10 minutes. Pour in brandy and knead and soak for 5 minutes and then drain. 2. Heat up a pan with some oil, fry the garlic until golden brown and fragrant, remove and set aside. 3. Stir fry ginger, minced pork and soy bean paste with some oil and sprinkle some water and stir fry until cooked. 4. Add water, salt and set to boil. 5. Add in liver and continue boiling. 6. When serving, put the kidneys in a bowl, pour over the boiling soup and garnish with spring onions, celery and fried garlic. |
