Ingredients: (Serves 6-8) 1.5 kilo gram Fillet of Fish 4 cm piece Turmeric Half cup Garlic 200 gram fresh Ginger 3 tbsp Sesame seeds 6 Fresh Red and Green Chillies 20 tbsp Sugar Half cup Vinegar 2 cup of Oil Method: 1. Wash and cut the fillet of fish into halves. 2. Slice ginger finely. 3. Wash and slice the chillies and dry it under the sun. 4. Heat up a pan with some oil. Fry the sliced ginger until fragrant. Remove from oil and drain. 5. Fry the garlic until brown golden color, drain and set aside. 6. Fry the turmeric until the oil turns yellow, remove from oil and set aside. 7. Strain the oil and cool it. 8. Roast the sesame seeds until brown and roasted. Set aside. 9. Heat up the pan with some oil. Put in the halves fillet of fish and fry until cooked. 10. Preparing the pickle. Get a dry jar (make sure it is dry thoroughly), spread a layer of roasted sesame seeds, ginger and garlic. Spread the fried fish fillet on top. Pour in few tbsp oil and vinegar on top of the fish. Repeat these steps a layer of sesame seeds, a layer of fish with some oil and vinegar, until all ingredients have been used. Cover up and tighten up. Store for a week before serve. 11. Serve after a week with fragrant hot steam rice. |
