Ingredients: (Serves 6-8) 25 Dried Chillies 150 gram Shallots 5 Red Chillies 2 Cloves Garlic 4 cm piece Ginger 5 stalks Lemon Grass thinly sliced 6 Slices Galangal 6 Candlenuts 2 tbsp Shrimp Paste 1 tsp Salt 1 tsp Sugar 1 tbsp Soy Sauce 1000 gram Rump Steak 2 stalks Lemon Grass 150 grated Coconut, pounded and fried 3 tbsp Curry Powder mix with 2 tbsp water 1 cup Coconut Milk 10 tbsp Oil Method: 1. Ground dried chillies, shallots, chillies, garlic, ginger, galangal, and candlenuts together finely. 2. Mix salt, sugar, and soy sauce to form mixture. 3. Heat up a pan with some oil. Fry the ground ingredients and curry powder until fragrant. 4. Add in half cup of coconut milk and fry until the oil separates. 5. Add in soy sauce mixture, steak, fried grated coconut, lemon grass and stir fry for another 15 minutes. 6. Put in the remaining half cup coconut milk and simmer until the meat is tender about 45 minutes to 1 hour. 7. Once the meat is cooked, turn to high flame to get the gravy thicken. 8. Serve while hot. |
