Ingredients: (Serves 4-6) 500 gram Red Snapper 8 fresh Red Chillies 3 stalks Lemon Grass 1 Ginger Flower 14 dried Chillies 2 tbps Shrimp paste mixed in 2 tsp Water 8 Shallot 1 cup Tamarind juice Salt and Sugar to taste 1 cup Oil Method: 1. Wash and slice the red snapper into thin slices. 2. Slice red chillies, ginger flower, lemon grass, shallots. 3. Heat up a pan with some oil. Fry the sliced shallots until brown and transperant. 4. Add in tamarind juice, 4 cups of water, salt and sugar, set to boil. 5. Put in sliced chillies, lemon grass and shrimp paste. 6. When the curry is boiling, add in the fish slices, ginger flower sliced. Simmer for 10 minutes until the fish is tender. 7. Serve with fragrant rice while hot. |
