Nyonya Spicy Prawns

Ingredients: (Serves 4-6)

500 gram Large Prawns

2 tsp turmeric powder

Salt and Pepper to taste

1 tbsp Lime juice

2 cup Coconut Milk

15 Shallots

6 cloves Garlic

6 Candlenuts

2 slice Galangal

8 Red Chillies

6 cm piece Palm Sugar

1 tbsp Shrimp paste

Couple pieces steamed Banana leaves cut in 10 cm x 5 cm

Method:

1. Wash, shell and de-veined the prawns, drain and set aside.

2. Mix turmeric powder, salt, pepper, and lime juice together.

3. Season the prawns with turmeric mixture for 10 minutes.

4. Pound shallots, garlic, candlenuts, galangal, red chillies together finely.

5. Mix the pounded ingredients, coconut milk, palm sugar and prawns well. Season for another 10 minutes.

6. Spread the mixture ingredients onto the banana leaves and wrap nicely.

7. Setup charcoal fire and grill the wrapped prawns, flip over on and off until done.

8. Serve together with the wrappers and fragrant rice.
