Peranakan Nasi Lemak

Ingredients: (Serves 4-6)

1 kilo gram Rice

3 cup of Coconut Milk

8 pieces Screwpine Leaves

Salt to taste

Method:

1. Wash and soaked the rice overnight.

2. Drain the rice and put in rice cooker.

3. Pour in 2 cup coconut milk and salt to cook.

4. Boil until the rice is dry.

5. Add in screwpine leaves on top and leave the rice for another 30 minutes.

6. Pout in the 1 cup coconut milk and stir well with the rice, screwpine leaves and coconut milk evenly.

7. Leave for another 30 minutes to let the rice absorb the coconut milk and fragrant smell of screwpine leaves.

8. Serve while hot with prawn sambal, fried and roasted peanuts with some sliced cucumber and fried fish.
