Sambal Egg

Ingredients: (Serves 4-6)

3 hard boiled eggs without shell

4 Red Chilles

4 Green Chillies

8 small Red Onions

6 clove Garlics

4 thin slice Galangal

4 pounded Chillies

1 cup Coconut Milk

4 tbsp Oil

Salt and Sugar to taste

Method:

1. Slit lengthwise the red and green chillies.

2. Sliced the red onion thinly.

3. Crushed the garlic finely.

4. Fry the galangal, garlic, and onion with some oil in a heated pan.

5. Put in the pounded chillies and cut chillies in to fry for 5 minutes.

6. Add in coconut milk and simmer until the gravy get thickens with low fire.

7. Add in some salt to season and taste.

8. Add in egg either cut in quarters or halves and cook for another 5-10 minutes.

9. Serve while hot.
