Special Mixed Vegetables Pickel or Acar Awak

Ingredients: (Serves 6-8)

300 gram Long Beans

300 gram French Beans

1.5 kilo gram Cucumber

2 Carrots

300 gram Cabbage

300 gram Roasted & Pounded Peanuts

20 Dried Chillies

400 gram Brinjals

4 Stalks Lemon Grass

6 cm piece Galangal

6 cm piece Turmeric

3 tbsp Toasted Shrimp Paste

8 Candlenuts

2 tbsp Oil

4 tbsp Sugar

2 tsp Salt

3 tbsp Vinegar

Method:

1. Wash and shred the cucumber. Soak in salt water for 20 minutes and then drain and squeeze out the water.

2. Wash and shred the rest of the vegetables and dry well.

3. Grind together shrimp paste, lemon grass, turmeric, galangal, candlenuts, dried chillies and onion finely.

4. Heat up a pan with some oil, put in the ground ingredients and fry until fragrant.

5. Add in sugar, salt, vinegar mix well.

6. Add in all shredded vegetables and mix well with the gravy. Add in pounded peanut and stir well.

7. Simmer the vegetables for 10-20 minutes with cover closed.

8. Either serve it hot or cool. Let it cool well and store in air tight container before keep into refrigerator.
