Spicy Siam Mee / Vermicelli

Ingredients: (Serves 6-8)

800 gram Rice Vermicelli

600 gram Bean Sprouts

800 gram fresh Prawns - shelled, removed intestine.

3 piece Bean Curd

3 tbsp Tow Cheong

12 Dried Red Chillies

10 Shallots

5 clove Garlic

3 large Onions sliced

3 hard boiled eggs

4 small Limes cut into halve

6 stalk Chives

1 tsp Salt

2 tbsp Oil

Method:

1. Wash the vermicelli and soak into water until soft.

2. Wash the bean sprouts and cut away the tail, soak in water.

3. Slice the bean curd thinly and slightly fry.

4. Grind shallots, garlic and onion finely.

5. Heat up a pan with some oil and fry the ground ingredients until fragrant.

6. Add in the prawns and stir fry until cooked. Add in sliced onions and slight fry.

7. Add in the tow cheong sauce and mix it well.

8. Add in bean sprout and slightly fry.

9. Add in the chives and bean curd.

10. Add in the vermicelli and fry well, mix well with the ingredients. Fry for 15-20 minutes. Add some water if too dry.

11. Put in salt to taste.

12. Serve while hot with hard boiled eggs and lime.
