Stuffed Prawn Cuttle Fish in Peanut Sauce

Ingredients: (Serves 6-8)

32 piece Cuttle Fish

800 gram Medium size Prawns

2 Chopped Spring Parsley

Salt and Sugar to taste

Sauce Ingredients:

1.5 cup roasted and pounded Groundnuts

Ground these ingredients together:

a. 8 Fresh Chillies

b. 10 Shallots

c. 2 stalk Lemon Grass

d. 4 cm piece Ginger

e. 3 cloves Garlic

1 cup Thick Coconut Milk or 2 cup Skinny Milk

3 tsp Tamarind Juice

1.5 tbp Brown Sugar

4 tbsp Oil

Method:

1. Wash the cuttle fish and left as a whole.

2. Shelled prawns and its intestine. Chop finely.

3. Add salt and pepper in chopped prawns, also add in chopped parsley. Set to season for 10 minutes.

4. Stuff the season ingredients into cuttle fish and fix the both end with toothpicks.

5. Heat a pan with some oil set to medium fire. Fry the grounded ingredients and groundnuts until smell fragrant.

6. Put in coconut sugar, tamarind juice and brown sugar and stir for until well mix.

7. Add in stuffed cuttle fish and set to boil until cooked.

8. Serve with curry or sambal shrimp paste.
