Traditional Shredded Chicken with Pandan Leaves

Ingredients: (Serves 4-6)

4 shredded Chicken Drumsticks

4 Screwpine (Pandan) Leaves

1 large piece Ginger

1 tsp Coriander Seeds

1 tsp Aniseeds

1 tsp Sugar

1 tsp Pepper

4 tbsp Thick Coconut Milk

3 tbsp Oil

Method:

1. Ground coriander seeds, aniseeds, pepper together finely.

2. Pound the ginger and extract the juice.

3. Season the chicken with grounded ingredients, ginger juice for 30 minutes.

4. Heat up a pan with some oil, fry the screwpine leaves until fragrant.

5. Put in seasoned chicken and cook until it is tender.

6. Put in thick coconut milk and stir fry until gravy get thickens.

7. Serve while hot.
