Ingredients: (Serves 4-6) 1 grated Coconut 10 Shallots 10 Cloves Garlic 2 Turmeric Leaves 1 tbsp Lime Leaves 800 gram Fish - sliced and flaked 800 gram small Prawns 6 cup cooked Rice 1 Cucumber 4 Red and Green Chillies 1 bowl Chicken stock 1 tsp Salt 2 tbsp Oil Method: 1. Pound the grated coconut and dry fried it. 2. Slice shallots, garlic, chillies finely. 3. Shred turmeric leaves, lime leaves. 4. Heat up a pan and fry the shallots, garlic, chillies until fragrant. 5. Add in prawns and fry for 2 minutes. 6. Add in fish and fry for 5 minutes until cooked. 7. Boil up the chicken stock. 8. Mix the cooked rice with the fry ingredients. Stir and mix well with low frame. 9. Put in little by little the boiling chicken stock to moisten the rice. Put in some salt to taste. 10. Serve with fresh cut chillies or sambal. |
