Cantonese Pickled Vegetables

Ingredients:
100g turnip
100g cucumber
100g carrot
10 slices ginger root
1/2 hot red pepper
1/2T salt
Mixture1(3T sugar, 3T vinegar)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cut turnip, cucumber and carrot into bite-size pieces; add ginger root slices, hot red pepper and salt. Mix and let stand 6 hours.
2)Lightly rinse vegetables; drain and add Mixture2; mix ingredients and let mixture stand 6 hours in refrigerator; serve.

Remark:
Shape of ingredients can be varies as diced, shredded, or diagonally cross-cut into big or little pieces according to your preference and the soaking time should be revised accordingly.
