Saucy Stir-Fried Bamboo Shoots

Ingredients:
500g small precooked bamboo shoots

6C oil for frying

1/2C water

300g green vegetables (example spinach)

Mixture1(2T sweet bean paste, 2T soy sauce, 1T sugar, 1/2T rice wine)

Mixture2(1/2t salt)

[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cross-cut bamboo shoot into bite-size pieces. Heat oil for deep-frying; deep-fry bamboo shoot 2 minutes over medium heat until golden brown; remove and drain. Remove all but 3T oil from pan; stir-fry pre-mixed Mixture1 until fragrant; add bamboo shoot and 1/2C water; cook over medium heat about 3 minutes nearly dry. Add 1T sesame oil and toss ingredients lightly to mix together; place bamboo shoot on center of serving plate.

2)Heat pan and 4T oil; stir-fry vegetable and Mixture2 30 seconds. Portion to both sides of serving plate, surrounding bamboo shoot; serve.
