Stir-Fried Bamboo Shoots

Ingredients:
200g precooked sliced bamboo shoots

60g green vegetables (example watercress)

1C oil

Mixture1(1/2C vegetarian stock, 1/2t salt, 1/4t sugar)

Mixture2(1/2t cornstarch, 1t water)

dash of coriander (decoration purpose)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Trim any old leaves from green vegetables; rinse, drain and cut into 1/2-inch pieces.

2)Heat pan and 1C oil; stir-fry the bamboo shoot slices about 1 minute over low heat; remove and drain. Remove all but 2T oil from pan; reheat and add green vegetable sections; stir-fry briefly and add Mixture1 and bamboo shoot slices. When liquid boils, add Mixture2 to thicken and 1T oil. Toss ingredients lightly to mix together and remove to serving plate. Garnish on top with coriander.
