Stir-Fried Bean Sprouts and Vinegar

Ingredients:
500g bean sprouts

1/4C shredded green pepper

1t Szechuan peppercorns
Mixture1(1t salt, 4t soy sauce, 1/2t sugar, 2T vinegar)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Remove discolored ends from bean sprouts and rinse; place in cold water to keep fresh; before using drain.
2)Heat pan and 3T oil; stir-fry Szechuan peppercorns over medium heat until fragrant; remove peppercorns (leaving oil) and discard. Add bean sprouts, green pepper and Mixture1; stir-fry over high heat until ingredients are heated through and remove to serving plate; serve.

 

Remark:
1)Green pepper may be omitted; however, the ends of bean sprouts should be removed to improve taste and appearance of dish.
