Authentic Chicken Tikka

Ingredients: (Serves 6-8)

1 large Chicken

Marinade Ingredients:

6 cloves ground Garlic

5 cm piece ground Ginger

5 cm piece ground unripe peeled Papaya

2 ground Red Chillies

1 tsp Salt

Half cup Curd

3 tbsp Tomato Sauce

Juice from 1 lime

1 tbsp Oil

Couple Nutmeg

Basting Ingredients:

6 ground and seeded Cardamoms

2 tsp ground Black Pepper

3 tbsp Oil

Juice from 1 lime

Method:

1. Deboned and cut the chicken into 8 large pieces.

2. Mix well the marinade ingredients and marinate the chicken overnight if possible.

3. Set up a charcoal fire, put each piece of chicken on each skewer, roast over the charcoal fire or in a charcoal stove until every sites are brown.

4. Continue basting the chicken with the marinade sauce and basting sauce until all has been used up.

5. Turn the chicken over and over again. Serve piping hot.
