Authentic Duck Masala

Ingredients: (Serves 6-8)

1 kilo gram Duck

2 large sliced Onion

5 Cardamoms

2 small stick cinnamon

3 cm piece fine shredded Ginger

1 tsp Turmeric Powder

1 tsp ground Black Pepper

1 tsp ground Coriander

3 Red Chillies

3 cup Hot Water

2 tbsp Apple Vinegar

4 peeled and halves Potatoes

3 cup Peas

3 tbsp Oil

Salt to taste

Method:

1. Cleaned and cut the duck into pieces.

2. Heat up a large pan with some oil, fry onions, cardamoms, cinnamon until golden brown.

3. Add in ginger, pepper, coriander and turmeric fry for 5 minutes.

4. Add in duck pieces and cook until brown.

5. Add in chillies, water and salt to taste, apple vinegar and stir constantly, mix well.

6. Cover up the pan and set to simmer for at least 45 minutes with medium low heat, until the duck is tender.

7. Scope out the floating fat, then add in potatoes and cook until it is soften.

8. Add in peas, add some more seasoning if needed. Cook for several minutes and serve hot.
