Authentic Pork Curry |

Ingredients: (Serves 6-8) 800 gram Lean Pork 1 tsp Chilli Powder 2 cup Coconut Milk 6 cm piece shredded Ginger 3 large chopped Onions 5 cloves chopped Garlic 1 tsp ground Coriander 1 tsp ground Cummin Salt to taste Brown Sugar to taste Method: 1. Wash and cube the lean pork. Drain, set aside. 2. Get a deep saucepan or pot, put in pork, coconut milk, onions, ginger, garlic and ground spices together. 3. Set to boil with medium low heat slowly, add salt and brown sugar to taste. 4. Reduce heat to low, cover up and set to simmer for an hour or 1.5 hours, until the pork is tender. 5. Serve while hot. |
