Hot & Spiced Yellow Pumpkin or Sagoo

Ingredients: (Serves 4-6)

300 gram Yellow Pumpkin

2 tbsp Oil

2 tbsp Lentils

1 tsp Black Mustard Seeds

8 curry leaves

1 tsp finely chopped Garlic

2 tsp ground coriander

1 tsp ground Cummin

Half tsp ground Turmeric

3 tbsp freshly grated Coconut

Salt to taste

Method:

1. Peel and seeded the pumpkin and cut into pieces, wash and drain aside.

2. Heat up a saucepan with some oil, fry lentils, mustard seeds, and curry leaves until fragrant and mustard seeds pop.

3. Add in garlic and fry for couple minutes. Add in ground spices and stir well.

4. Put in the pumpkin pieces and add enough water to cover up the pumpkins.

5. Add some salt to taste, cover up the pan and simmer until pumpkin is half cooked.

6. Pour in coconut milk and cook until pumpkin is tender. Serve.
