Indian Avial

Ingredients: (Serves 4-6)

1 Carrot

1 Potato

1 Cucumber

1 Brinjal

10 French Beans

1 Cooking Banana

1 Yam

3 Large Onions

6 Green Chillies

1 tsp Cummin

1 cup Water

Half grated Coconut

Half cup Yoghurt

Half tsp Turmeric Powder

1 tbsp Oil

4 Springs Curry Leaves

Salt to taste

Method:

1. Ground together onions, chillies, cummin, water finely.

2. Ground grated coconut.

3. Wash and cut all vegetables into 6 cm strips.

4. Heat up a pan with 1 cup of water, put cut vegetables, turmeric and salt to cook for 25 minutes.

5. Add in the ground ingredients and continue to cook with low flame. Stir and mix well.

6. Add the curd, stir and mix well. Continue to cook for 5-10 minutes then remove from heat.

7. Add 1 tbsp oil to curry leaves, and sprinkle on the avial then serve.
