Ingredients: (Serves 4-6) 250 gram Indian Wholemeal Flour A knob of Ghee Some Lukewarm water Salt to taste Method: 1. Mix together ghee, flour, and salt in a mixing bowl. 2. Pour in water gradually and mix well until it forms a firm dough. 3. Knead the dough as long as possible, since the longer the dough is kneaded, the lighter the chapati will be. 4. Put back the dough into the mixing bowl. Cover up with damp tea tower and set overnight. 5. Cut the dough into small balls, roll out thinly on a lightly floured board. 6. Heat up a frying pan with some little oil, cook the chapatis one by one for about 1-2 minutes, need to flip over frequently to get both side cook thoroughly. 7. Once the chapati is cooked, cover with dry tea towel to keep warm. 8. Serve while still warm, fresh and soft with curry or dhall. |
