Indian Cummin Chicken |

Ingredients: (Serves 6-8) 1 Large Chicken 2 cups Yoghurt 1 tsp ground Black Pepper 2 tbsp Whole Commin 3 large sliced finely Onions 3 cloves crushed Garlic 3 cm piece shredded Ginger 5 tbsp Oil Juice from 2 lemons Rind of 1 lemon 1 cup of flour Method: 1. Cleaned the cut the chicken into medium size pieces. 2. Apply lemon juice all over the chicken pieces and left aside for 1 hour. 3. Drain the chicken and rub over with salt, pepper and flour. 4. Heat up a deep pan with some oil, put in the chicken and fry the chicken pieces until golden brown. Remove from pan and set aside to drain the oil. 5. Add in onions, garlic, ginger and cummin to fry in the hot oil until brown and fragrant. 6. Add in the chicken with lemon rind and stir well. 7. Pour in yoghurt and little water on to the chicken, stir well and make sure chicken is fully coated with the gravy. 8. Set flame to low and simmer for 60-90 minutes until the chicken is tender, gravy absorbed. Remove rind before serving. |
