Indian Curry Mutton with Drumstick

Ingredients: (Serves 6-8)

800 gram Mutton

8 Drumsticks

4 cm piece stick Cinnamon

6 Cloves

1 tsp Mustard Seeds

Half tsp Garam Masala

1 cup thick Coconut Milk

2 cup thin Coconut Milk

3 seeded & chopped Green Chillies

2 quartered Tomatoes

2 large sliced Onions

6 tbsp Oil

Salt to taste

2 Spring Curry Leaves

5 cm piece sliced Ginger

1 tsp Turmeric powder

4 cloves chopped Garlic

Method:

1. Clean and cube the mutton, wash and drain.

2. Skinned and cut the drumstick into 3 cm length.

3. Place mutton in a deep saucepan, cover over with water, add in half portion of ginger and garlic, set to boil. Boil until the mutton is tender with absorbed the liquid.

4. Heat up a pan with some oil, fry onions, mustard seeds, curry leaves, the remaining ginger and garlic until fragrant and brown.

5. Put in curry powder, black pepper, and turmeric with some thin coconut milk, then stir well.

6. Continue to stir until the oil separates, then add in mutton and drumsticks, also the remaining thin coconut milk, stir continuously.

7. Set to boil, once boiled, reduce heat and cook until the gravy get really thickens.

8. Add in thick coconut milk and set to simmer until the drumsticks are soft.

9. Sprinkle some salt to taste, add in tomatoes, and chillies, set to simmer for 15 minutes before serve.
