Ingredients: (Serves 4-6) 300 gram Spinach 2 medium Turnips 1 tbsp Ghee 1 tsp Black Mustard Seeds 1 large finely chopped Onion 1 tsp freshly grated Ginger 1 tsp Chilli powder 1 tsp ground Turmeric Half tsp Garam Masala Salt to taste Method: 1. Wash and cut the greens tough stalks. Drain. 2. Cut the leaves into small pieces, put in a large pan and sprinkle some water. 3. Dice the turnip and add into the pan. 4. Cover up the pan and cook in low heat, until the vegetables are soft. 5. Mash the vegetables. 6. Heat up a frying pan with some ghee, fry the onions, mustard seeds and ginger until golden brown. 7. Add the chilli, turmeric, mashed vegetables and some salt to taste. 8. Stir and mix well, then cook for 5 minutes. Sprinkle with garam masala all over it. 9. Cover up the pan and leave on the minimum heat until all liquid is dried. 10. Add salt to taste if needed. Sprinkle some lemon juice or vinegar if needed. Serve. |
