Indian Sweet Tomato Chutney

Ingredients: (Serves 6-8)

1.5 kilogram Ripe Tomatoes

1 cup Raisins

1 tsp Mustard Seeds

1 tsp Cummin

1 tsp Fenugreek Seeds

3 Sprigs Curry Leaves

1 cup Vinegar

1 tsp Chilli Powder

1 tsp Turmeric Powder

Half tsp Salt

1 small cup Brown Sugar

Half small cup Oil

Method:

1. Wash and chop the ripe tomatoes into quarters.

2. Heat up a deep pan with some oil, fry fenugreek seeds, mustard, cummin till brown in color, fragrant and the seed crackling.

3. Add in brown sugar, quartered tomatoes, curry leaves, turmeric, chilli powder, raisins and salt. Stir constantly until all ingredients are mix well and the sauce dries.

4. Pour in vinegar and continue simmer until the oil separates with low flame. Set aside to cool and put in glass bottle.

5. Keep this chutney in refrigerator.
