Indian Uppuma or Savory Semolina |

Ingredients: (Serves 4-6) 3 cups Semolina 5 tbsp Vegetable Oil 1 tsp Black Mustard Seeds 10 Curry Leaves 1 tbsp Black lentils 1 tbsp Yellow Split Peas 6 dried Red Chillies 2 cups chopped Onion 1 tbsp fresh Red or Green Chillies 1 tbsp grated fresh Ginger 2 cups diced Vegetables (cauliflower, carrots, peas) 3 cups of hot water 3 tsp Ghee 2 tsp Salt 1 small cup Lemon Juice Method: 1. Heat up a saucepan with 2 tbsp oil, fry semolina until golden brown color. 2. Remove semolina from saucepan, set aside. Clean up the pan and heat with 3 tbsp oil. 3. Add in mustard seeds, dried chillies, curry leaves, both types of lentils, continue to fry. 4. When the lentils fry till golden color, put in onions and continue frying until soft. 5. Add in fresh chillies, vegetables, ginger and stir for 10 minutes. 6. Pour in water and salt, set to boil, add in semolina and stir until the mixture is boiling. Keep stirring until quite dry. Cover up pan and cook with low heat until semolina is cooked through. 7. Add ghee and stir well. Pour in lemon juice, stir and serve warm or cold. |
