Just A Lamb Curry |

Ingredients: (Serves 6-8) 1.5 kilo gram boneless Shoulder Lamb 3 tbsp Ghee 3 large Red Onions chopped nicely 5 cloves chopped Garlic 1 tbsp finely chopped Ginger 3 tbsp Curry Powder 3 tbsp Vinegar 3 ripe Tomatoes 3 fresh Chillies 3 tbsp fresh Mint Leaves coarsely chopped 1 tsp Garam Masala 1 tbsp fresh chopped Coriander leaves Salt to taste Method: 1. Wash and drain the lamb. Cut into bite-sized cubes. 2. Heat up a pan and melt the ghee, fry the onions to golden, add in ginger and garlic fry till fragrant. 3. Add in curry powder, and vinegar stir well. 4. Add in the lamb cubes into the mixture and stir well. 5. Add in the tomatoes, chillies, and mint leaves. Stir well. 6. Cover up the pan, cook over a medium low heat for about an 90 minutes, until the lamb is tender. Stirring periodically, if the curry get too thick and the meat stick on to the pan, add in some hot water and stir well. 7. When the meat is tender, add in garam masala and coriander leaves and serve. |
