Mixed Vegetable & Prawn Curry |

Ingredients: (Serves 4-6) 600 gram small prawns 3 Brinjals 3 Ladies Fingers 3 chopped Onions 3 cloves crushed Garlic 3 cm piece chopped Ginger 1 tsp Turmeric Powder 1 tsp ground Fennel 4 tbsp Oil 1 tsp Chilli powder 2 cups Coconut Milk Salt to taste Method: 1. Wash, shell the prawns and remove its intestine. 2. Wash brinjals and cut into 6 pieces each. 3. Wash ladies fingers and cut into 4 cm length each. 4. Heat up a pan with some oil, fry the onions until golden brown. 5. Add in garlic, ginger and chillies, fry for 5 minutes. 6. Add in coriander, chilli powder, fennel and turmeric, fry constantly, until oil separates. 7. Add in brinjals and ladies finger, salt and coconut milk into the pan, bring to boil with low heat. 8. Add in prawns and simmer until the gravy gets thicken. |
