North Indian Style Meat and Tomato Curry

Ingredients: (Serves 6-8)

1.2 kilo gram Lamb or Mutton

600 gram Ripe Tomatoes

3 large Onions finely sliced

10 tbsp Oil

4 Bay leaves

Set 1 Ground Ingredients:

12 Shallots

5 cm piece Ginger

8 cloves Garlic

8 fresh Red Chillies

Set 2 Ground Ingredients:

6 Cardamoms

4 cm Cinnamon stick

12 Black Peppercorns

Method:

1. Wash and drain tomatoes, chopped and blended.

2. Heat up a pan with some oil, fry onion until brown. Put in set 1 ground ingredients and meat brown well together. Add little water to prevent the spices from over burning.

3. Pour in the blended tomatoes and stir thoroughly well.

4. Pour in 4 cup of water, salt to taste, bay leaves and set to simmer with medium to low heat until the meat is tender.

5. Sprinkle set 2 ground ingredients on top and serve it hot, can garnished with chopped chillies or coriander leaves.
