Potato Curry With Mutton |

Ingredients: (Serves 6-8) 1 kilo gram Lamb or Mutton chop 6 Potatoes cut into halves 10 fresh Red Chillies 1 bunch Coriander leaves 5 cloves Garlic 3 cm piece Ginger 2 cup thick Coconut Milk 1 tbsp Cummin 1 tbsp Khus Khus 1 tsp Black Peppercorns 1 tsp Turmeric Powder 1 tsp ground Nutmeg 2 large sliced Onions 5 tbsp Oil Salt to taste Method: 1. Cut the mutton or lamb into half. 2. Grind garlic, coriander leaves, ginger together and mix with 3 tbsp coconut milk to become a paste. 3. Marinate the mutton with the ground spices overnight. 4. Heat up a pan with some oil, fry the khus khus, cummin, grated coconut for couple minutes. 5. Put in the turmeric, nutmeg and black peppercorns and fry until brown and fragrant. Remove from heat. 6. When cool, put into blender and pour in the coconut milk, blend to smooth paste. 7. Heat up another pan with some oil and fry the onion until golden color. 8. Pour in the coconut and spice mixture paste, fry for 10 minutes. 9. Add the marinated meat, stir well and set to boil with medium low heat slowly for 15 minutes 10. Set to low heat, cover up the pan and simmer for 30-45 minutes until the meat is tender. 11. Add in potatoes and some salt to taste, cook until potatoes are soft. 12. Serve hot with fragrant rice. |
