Potatoes and Spinach Stir Fry |

Ingredients: (Serves 4-6) 800 gram Potatoes 200 gram chopped Spinach 1 tsp Turmeric powder 1 tsp Garam Masala 3 cm piece shredded finely Ginger 1 tsp Chili powder 1 tbsp Ghee Salt to taste Method: 1. Wash, skinned, scraped and quartered the potatoes. Drain and set aside. 2. Heat up a pan with some ghee, fry ginger for 3 minutes. 3. Add in turmeric, chilli powder and salt to stir fry for couple minutes. 4. Add in potatoes and fry for 5 - 10 minutes. Reduce heat, cover up the pan and simmer until potatoes are soft and half cooked. 5. Put in spinach and stir fry for 20 minutes. 6. Sprinkle garam masala and stir well. Server while hot. |
