Pumpkin Kootu

Ingredients: (Serves 4-6)

500 gram Pumpkin

4 dried Chillies sliced

5 Shallots sliced

Half tsp Mustard Seeds

1 cup thick Coconut Milk

1 cup thin Coconut Milk

1 tsp Sugar

1 tsp Ghee

Salt to taste

Method:

1. Skinned, washed and cut the pumpkin into cube size.

2. Heat up a pan with some ghee, add mustard seeds and shallots to fry for couple minutes.

3. Add in pumpkin cubes, thin coconut milk and salt to taste. Set to simmer.

4. Once the pumpkin is cooked, pour in thick coconut milk. Stir well and set to simmer through low flame for 5 minutes.

5. Add in sugar and continue cooking until the gravy thickens.
