South Indian Chicken Curry

Ingredients: (Serves 6-8)

1 Large Chicken

5 chopped Tomatoes

3 quartered Potatoes

2 large chopped Onions

2 cup thick Coconut Milk

2 cup thin Coconut Milk

1 cup ground Cashewnuts

1 cup of Oil

Salt to taste

Set 1 Ground Ingredients:

3 cm piece Cinnamon Stick

3 Cloves

3 Cardamoms

9 Black Peppercorns

Set 2 Ground Ingredients:

5 cm piece Ginger

1 pod Garlic

Set 3 Ground Ingredients:

8 dried Chillies

Small piece Turmeric

3 tsp Aniseed

Method:

1. Heat up a deep big pan with some oil, fry onions until golden brown.

2. Put in tomatoes and fry for 5 minutes.

3. Put in ground spices set 1 and fry for couple of minutes.

4. Add in ground spices set 2 and fry for 3 minutes.

5. Add in ground spices set 3 and fry well.

6. Add in the chicken and fry well until the oil seperates.

7. Pour in thin coconut milk and add in potatoes. Set to simmer until the chicken is tender.

8. Pour in thick coconut milk and ground cashewnuts, sprinkle some salt to taste and serve while hot.
