Spicy Prawn & Brinjal Curry |

Ingredients: (Serves 4-6) 500 gram Brinjals 300 gram Shrimps 1 cup thick Coconut Milk 2 tbsp Curry powder 3 large sliced Onions 3 cloves chopped Garlic Chilli powder to taste 1 sprig Curry leaves 1 tsp Turmeric powder Salt to taste Method: 1. Dice brinjals with adding salt and pepper. 2. Heat up a pan with some oil, fry the brinjals slightly. Remove and set aside. 3. Wash the shrimps and remove its intestine. Add salt and some turmeric. Fry in the same pan until crisp. Remove from pan. 4. Mix coconut milk, curry powder, chilli powder, and tamarind juice together with some salt. 5. Heat up a pan with some oil, fry onions, garlic and curry leaves until fragrant. 6. Add in the brinjals and prawns. 7. Pour in the coconut milk mixture and set to simmer for about 20 minutes until the gravy is thickens and oil surface. 8. Serve hot with fragrant rice. |
