Stuffed Brinjals |

Ingredients: (Serves 4-8) 5 round Brinjals 2 large chopped Onions 100 gram Ghee 100 gram Green Peas 100 gram Tomatoes 50 gram diced Carrot 1 tsp finely chopped Ginger Salt and Pepper to taste Method: 1. Wash and the boil the brinjals in salted water for 5 minutes. 2. Cut the brinjals into halve 4 cm through middle and scoop out the pulp. 3. Add salt and pepper to season the brinjals. 4. Heat up a pan with ghee and fry the onions, peas, and diced carrots. 5. Add in tomatoes and cook over low heat until vegetables are cooked. 6. Add in ginger and salt to fry for 2-3 minutes. 7. Stuff the brinjals with the cooked vegetables. Bake for 15 minutes until golden brown. Serve. |
