General Ingredients: (Serves 6-8) 1 whole chicken cut into 6-8 pieces 2 bunch of Coriander Leaves 1 spray Mint Leaves 4 large Onions (slice thinly) 6 small cup of half cooked rice 4 screwpine leaves 300 gram Ghee 1 cup of tomato puree Set 1 Ground Spices Ingredients (ground finely): 2.5 cm piece Stick Cinnamon 6 Cardamoms 2 Nutmeg Set 2 Ground Spices Ingredients (ground finely): 1 large Onion 1 cup Fresh Ginger Half cup Garlic Set 3 Ground Spices Ingredients (ground finely with some water): Half cup Cashewnuts Half tsp Chilli Powder 1 tbsp Aniseed 1 tsp Turmeric Method: 1. Heat up a large pan and put in the ghee, melt it and add in onion. Slightly fry. 2. Add in ground Set 1 spices. 3. Continue fry for 5 minutes, add in mint, coriander leaves, tomatoes, chillies, screwpipe leaves, mix well. 4. Fry for 5 minutes, then add in Set 2 ground spices. 5. Fry until the mixture get brown in color, add in chicken and lower the to medium low. 6. Put in Set 3 ground spices and tomato puree, mix evenly. 7. When the chicken is cooked, add in the rice, mix well and lower the heat to low. 8. Cover up the pan until the rice is fully cooked. 9. Serve while hot with curry and vegetables. |
