Traditional Mutton Korma |

Ingredients: (Serves 6-8) 700 gram Boneless Mutton 2 large chopped Red Onions 4 cm piece sliced Ginger 5 cloves crushed Garlic 4 Green Chillies 1 tbsp Black Peppercorns 1 tsp Turmeric Powder 3 tbsp ground Cummin 2 ground Cardamoms 1 Cinnamon Stick 3 Tomatoes 4 cup of Coconut Milk 1 tbsp fresh Grate Coconut 3 tbsp Oil Salt to taste Some stalks Coriander leaves Method: 1. Grind chillies, black peppercorns, and fresh grated coconut together finely. 2. Mix cummin, coriander, cardamoms and turmeric together with some water to become a paste. 3. Get the mutton to boil in water with some ginger slices, crushed garlic until tender. 4. Heat up a pan with some oil. Fry the onions, cinnamon and the remaining ginger and garlic until fragrant. 5. Pour in the paste. 6. Fry with medium high fire until the oil surface, add in mutton, cover up with the spices. 7. Pour in coconut milk and switch to medium low heat to boil. Cover up the pan and let the gravy get thickens and dry. 8. Sprinkle salt to taste, add in lime juice and coriander leaves. 9. Stir well and remove from heat to serve. |
