Traditional Pahari Chicken

Ingredients: (Serves 6-8)

1 Large Chicken

5 tbsp Yoghurt

5 Cardamoms

5 finely chopped Green Chillies

3 Green Chillies

3 cm piece Ginger

8 cloves Garlic

1 tbsp finely chopped Coriander leaves

3 tbsp Ghee

Salt to Taste

Method:

1. Skinned and cut the chicken into pieces.

2. Beat the yoghurt with a fork until smooth and creamy.

3. Grind green chillies, ginger and garlic finely to a paste.

4. Heat a pan, add in ghee, chopped chillies, cardamoms and fry for 5 minutes.

5. Add in ground paste and fry for another 5 minutes.

6. Add in chicken and fry until golden brown.

7. Switch to low heat, add in yoghurt, stir mix well and simmer until the yoghurt is fully absorbed into the meat.

8. Put in coriander leaves, remove from heat and serve hot.
