Ingredients: (Serves 4-6) 12 sprig roll skins 4 tbsp Oil 1 clove crushed Garlic 1 large finely sliced Onion 3 sliced Red Chillies 3 boiled and diced finley Potatoes 200 gram Green Peas 1 tsp Beef Curry Powder 1 spray fresh chopped Coriander leaves 1 tbsp Lemon Juice Half tsp Salt Oil for deep frying Method: 1. Heat up a frying pan with some oil, fry onion until brown golden. 2. Add in crushed garlic and fry for 2 minutes. 3. Reduce heat to low, add curry powder and fry for couple minutes. 4. Add potatoes and peas, stir fry for 10 minutes, add in all other ingredients and stir fry. 5. Set aside and place on a dish. 6. Cut every spring roll skin into about 8 cm squares. 7. Place a full tablespoon of filling onto each square, and fold into a triangular. 8. Seal well with some water at each edge, dip into hot oil for deep frying until golden and crisp. Serve hot. |
