Unique Pork Vindaloo

Ingredients: (Serves 6-8)

800 gram cubed Pork

6 cm piece Ginger

5 cloves Garlic

20 Dried Chillies

3 tsp Turmeric Powder

12 Shallots

1 tbsp Cummin

Half cup Water

3 sprigs Curry Leaves

1 tsp Mustard Seeds ground coarsely

4 tbsp Oil

Salt and Vinegar to taste

Method:

1. Grind ginger, garlic, chillies, turmeric podwer, shallots and cummin together finely.

2. Marinate the pork with the ground spices, salt and vinegar for at least 45 minutes.

3. Heat up a pan with some oil, add in mustard seeds and dry fry until the seeds crackle.

4. Add in curry leaves and pork, stir well and fry for 5 minutes.

5. Pour in water and bring to boil. Cover up the pan, switch heat to medium low and simmer until the meat gets tender with all the sauce has been absorbed into the meat.

6. Serve while hot.
