Unique Snake Gourd Kootu

Ingredients: (Serves 4-6)

1 large sized Snake Gourd

Half cup Dhall

4 sliced Green Chillies

3 large sliced Onions

1 cup Coconut Milk

1 tsp Mustard Milk

1 sprig Curry leaves

2 cup Water

2 tsp Ghee

Method:

1. Wash and remove skin of the snake gourd, then cut into pieces. Drain.

2. Boil dhall with 2 cup of waters until cooked.

3. Put in gourd and cook until tender, remove and set aside.

4. Heat up a pan with ghee, fry sliced onions, chillies and mustard seeds about 3 minutes.

5. Add in boiled vegetables, coconut milk salt to taste, stir and mix well. Set to simmer over lowest heat.

6. Once the vegetables is cooked, remove and add curry leaves on top. Serve.
