Vegetable Fritters or Pakoras |

Ingredients: (Serves 4-6) 1 cup Chick Pea flour Half cup Baking Powder 2 tsp crushed Garlic 1 tsp Garam Masala 1 cup water 3 peeled Potatoes 1 Brinjal 2 Onions 1 head Cauliflower Half tsp Chilli Powder Enough Oil for deep frying Salt to taste Method: 1. Mix together garam masala, salt, garlic, flours, chilli powder and water well in a bowl. 2. Beat the mixture until smooth and light. Cover up the bowl and set aside for at least 1 hour. 3. Wash the potatoes and cut into very thin round slices. Soak in cool salted water. 4. Slice the brinjal thinly. 5. Peel and slice the onion thinly. 6. Separate cauliflower segments. 7. Heat up a frying pan with enough oil for deep frying. Dip vegetables one by one slowly in the batter, and put into oil for deep frying a few at a time. 8. Serve while warm with chutney. |
